Chicken Caesar Salad

(Serves 2)


4 chicken tenderloins

3 cups cos lettuce, torn

2 boiled egg, quartered

2 slices lean bacon, fat removed cooked and sliced

1 slice of bread brushed with olive oil and garlic, cut into cubes 

1 tbs fresh grated parmesan


2 tbs lemon juice

1 tbs white wine vinegar

1/3 cup natural yoghurt

1 tbs mayonnaise

1 tbs grated parmesan

1-2 anchovies, optional



To make dressing, place lemon juice, garlic and mustard in a food processor with the anchovies, vinegar, yoghurt, mayonnaise and grated parmesan and process until smooth. Season with salt and pepper. Preheat oven to 180°C. Place bread on baking tray lined with baking paper and bake in oven for 10 minutes or until crisp. Place lettuce in large bowl, toss through chicken, bread cubes, parmesan and bacon. Stir through dressing and combine well. Top with boiled egg quarters.
