Pumpkin Chia Pudding

Pumpkin chia pudding (makes 4)

8 tbs chia seeds

1 cup pureed pumpkin

1 cup almond milk

2 tbs Ayam coconut milk

½ tsp cinnamon

¼ cup maple syrup, rice malt syrup or desired sweetener


Toppings (choose as many as you like)


Slivered almonds


Coconut flakes

Berries; strawberries, blueberries or raspberries

Kiwi fruit, diced


Combine wet ingredients and cinnamon. Place 2 tablespoons of chia seeds into each ramekin and pour ½ cup liquid over the seeds.  Whisk with a fork until the mixture is well combined, cover and place in the fridge. Leave to set for at least 2 hours or overnight. Add desired toppings before serving.
