Meatballs in Sauce

(Serves 4-6)

Ingredients:

Pasta sauce

1 tbs olive oil

1 onion, finely diced

2 cloves garlic, crushed

2 celery stalks

1 carrot, grated

1 zucchini, grated

2 x 680g tomato passata

Handful basil, roughly torn

Salt and pepper, to season

Meatballs

500g lean mince

4 tbs parmesan cheese

2 cloves garlic, crushed

2 eggs

¼- ½ cup breadcrumbs

2-3 tbs pasta sauce

 

Method:

Preheat oven to 180. Heat large saucepan over medium-high heat, add olive oil and cook onion until soft, add carrot and celery and cook for a further 5 minutes. Turn heat down and add garlic but be careful not to overcook. Add tomato passata, bring to the boil and then reduce heat to a simmer. Cook on low heat, covered for 30 minutes. Add the zucchini and basil in the last 15 minutes, season with salt and pepper.

Meanwhile, combine mince, parmesan cheese, egg, garlic, breadcrumbs and some of the pasta sauce. Form into balls and set aside. Place the meatballs in a baking tray and pour the sauce over the top, add extra water if needed. Bake for 20-25 minutes, turning the meatballs after 10 minutes. Serve on zucchini noodles or steamed cabbage and pasta for the kids.
