
Salmon Nicoise
(Serves 2)
Ingredients:
125g salmon
1 cup baby beans, steamed
2 cups baby spinach, or any other lettuce
1 potato, steamed, cut into small cubes
8 olives
2 boiled eggs, quartered
Dressing
1 tbs basil, finely chopped
1 tsp horse radish cream, optional
2 tsp Dijon mustard
2 tbs white balsamic
1 tbs flaxseed/olive oil
Method:
Cook salmon to liking and set aside. Combine baby spinach and green beans in medium bowl and toss together with dressing. Divide among 2 plates and top with salmon pieces, potato cubes, boiled egg and olives
