
San Choy Bow
(Serves 4)
Ingredients:
500g pork mince
1 tsp olive oil
2 tbs finely grated ginger
1½ cups water chestnuts
1 zucchini, finely diced
2 celery stalks, finely diced
2 carrots, finely diced
4 tbs dry sherry
2 tbs chilli bean sauce
2 tbs tamari or soy sauce
Iceberg lettuce cups, for serving
Method:
Sauté ginger in oil, then add pork mince and brown. Add sherry, sauces and water chestnuts. Simmer for 5 minutes and thin out with water until good consistency. Spoon into lettuce cups for serving.
