4-6 large field mushrooms, stalks removed (can be finely diced and put into mixture)
150g cottage cheese
50g lean bacon, finely diced
1 tbs parsley, chopped
1 tbs basil, chopped
10g pine nuts or walnuts, lightly toasted
20g grated cheese
Combine cottage cheese, herbs and nuts. Put mushrooms topside down onto baking tray lined with baking paper. (use baking tray with raised sides because quite a bit of moisture escapes from mushrooms) Fill the mushrooms with cottage cheese mixture and sprinkle with grated cheese. Bake in the oven for 15-20 minutes or until cheese melted. Let mushrooms sit for 5 minutes to allow moisture to draw out.
